What The Kids Are Eating of the Day: Ruled not good enough by America’s largest fast-food chains, the so-called “pink slime” — meat and meat by-products treated with ammonia — is still A-OK by U.S. Department of Agriculture standards.
In fact, the USDA will reportedly purchase over 7 million pounds of the gunk to turn into hamburgers and tacos for cafeterias feeding America’s schoolchildren.
McDonald’s, Burger King, and Taco Bell were all persuaded to stop using ammonia-treated meat after the practice of rinsing dog-grade meat with ammonia to wash away harmful bacteria was brought to the attention of consumers by celebrity chef Jamie Oliver.
“We’re taking a product that would be sold in its cheaper form for dogs,” said Oliver on his TV show Food Revolution. “After this process, we can give it to humans.”
But a USDA spokesman said there were no plans to stop using pink slime as part of the national school lunch program.
“The U.S. Food and Drug Administration as well as the Food Safety and Inspection Service considers ammonium hydroxide as ‘generally recognized as safe,’” said the spokesman, Aaron Lavallee. “FSIS reviewed the suitability of Beef Products Inc.’s use of ammonium hydroxide in order to assess its effectiveness in performing the intended technical purpose of use, at lowest level necessary, and to ensure that the product is not adulterated or misleading to consumers.”
However, since ammonia beef falls outside the jurisdiction of federal labeling requirements, parents have no way of knowing what exactly is being served to their kids.

Clothed Descending a Staircase No. 2…

In an homage to Marcel Duchamp’s masterpiece Nude Descending a Staircase No. 2 (itself inspired by Eadweard Muybridge’s photographs), Eliot Elisofon photographed Duchamp performing the act himself in 1952, and used multiple exposures to mimick the artist’s famous time-lapse-style painting.

My good friend Bettina Pascual posing for me after a social event. She was my very first muse. Every time we went to parties, she would wear something special and I’d be there to shoot it. That motivated me to create a photo set of her called ‘Project Pascual’. I eventually invited her to model for my very first dive into conceptual fashion photography.

The Chinese started migrating here in the Philippines to settle concurrently at the start of the Spanish Rule. But the Spanish Colonial masters distrust them, they are a constant source of trouble for them because some of them are unruly. That is why the Spanish located them in a cannon distance from the San Gabriel Bastion in Intramuros. There are two Chinese settlements during the first two centuries of the Spanish Rule: Parian and Binondo.

Parian was once located in the sites now located by the Post Office, Metropolitan Theater, Arroceros, and up to SM Manila. Some might wonder the lack of a market inside Intramuros, it is because Parian acts as the market (or mall) for the walled city. In modern terms, Parian got it all for Intramuros. By the opening of the drawbridge at 4AM, Intramuros residents will flock in Parian to shop. Parian is the first mall in the Philippines, everything is in there: traders, merchants, craftsmen and laborers.

Because of the advance the British made through the suburbs nearest the walls of Intramuros in their invasion, the Spanish decided to demolish these villages, Parian was not spared. By 1780, Parian was no more and some former residents relocated to Binondo. Only a gate in Intramuros exiting at Parian became the sole mark of the existence of the Parian.

Binondo is originally the parish for the Chinese Converts by the Dominicans, no wonder that their patroness is also the Lady of the Rosary. But when the Parian was dissolved, Binondo became the sole enclave of Manila’s Chinese Mestizos and Chinese Immigrants who love to engage in trade and business. This is the one of the reasons why Binondo is the first Business District and the Chinatown of Manila. Even today, at any Chinese Festival the meeting point of these celebrations will always be at Binondo, as always the best known Chinese festival is the Chinese New Year, which we will celebrate few hours from now.

I shot this at Heirloom Manila. A location I found through extensive research over the internet.

I met the family who owns the place. They were very inviting and friendly. One of the more memorable photos I’ve done in my earlier years in photography. It was the first time I had to navigate and drive myself to get to the location . Using friends as models who were happy to have their photos taken.

There are, but my specialty in my career is never saying negative things about people — it’s praising people that other people don’t like; that’s more my beat … It basically wouldn’t be worth writing a book about; people you don’t like, you just ignore. I’d say the greatest success that I’ve had in my life is that I never have to be around assholes anymore; that’s better than rich. And rich just means you can just afford any book you want without looking at the price. That, to me, is rich.
